Orange Butter Cupcakes
200g flour
1/4 tbsp Baking powder
1/2 tbsp Milk powder
250g Butter
5 Eggs
175g Sugar
2 tbsps Orange juice
Zest of 1 Orange
Method
1. Cream flour, baking powder, milk powder and butter till smooth and fluffy. Do not over-cream or cake will sink.
2. Whip eggs and sugar together till light and thick.
3. Add orange juice and zest of orange into eggs and sugar, mix till evenly blended.
4. Combine flour mixture with egg, orange and sugar mixture. Mix till well incorporated.
5. Place batter into a greased and floured cup cake mould.
6. Bake at 190degC for 20 minutes.
7. Unmould immediately after baking and leave to cool.
8. Make little slits in the top of the cupcake and decorate with butter cream.
